
Maple Syrup Muffins
Nothing says spring like fresh maple syrup! Enjoy these delightful Maple Syrup Muffins from the timeless cookbook, Muffin Mania by Cathy Prange and Joan Pauli. muffinmania.ca
Soften margarine (or butter), and blend in sugar and salt.
Add dry ingredients and blend with pastry cutter until crumbly.
Mix in oats.
Blend milk and syrup together in a measuring cup and pour over dry ingredients stirring only to moisten.
Bake at 350 degrees for 20 minutes.
Spread glaze over muffins when slightly cooled.
Yields 8 large muffins.
